Almond & Orange Olive Oil Cake
INGREDIENTS
1 ¼ cup all-purpose flour
⅔ cup granulated sugar
½ teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
⅔ cup olive oil
½ cup Greek yogurt
2 large eggs
¼ cup orange juice
1 tablespoon orange zest
½ cup Mariani Slivered Almonds
Optional toppings: powdered sugar, whipped cream, orange slices, slivered almonds
INSTRUCTIONS
Preheat your oven to 350°F . Grease a 9-inch round cake pan and line it with parchment paper.
In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the eggs, yogurt, and olive oil. Add the orange juice and orange zest and mix until combined.
Gently fold the dry ingredients into the wet mixture, stirring just until no streaks of flour remain. Fold in the slivered almonds to distribute them evenly throughout the batter.
Pour the batter into the prepared cake pan. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Add toppings of your choice.
