Banana Walnut Muffins
INGREDIENTS
1/3 cup coconut oil
1/4 cup honey
1 cup mashed ripened bananas
1/4 cup milk
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon salt
1 3/4 cups gluten-free flour
1 cup + 1/2 cup Mariani Walnuts
INSTRUCTIONS:
Preheat the oven to 350 degrees and line a muffin pan with muffin tins.
Add 1/3 cup coconut oil, 1/4 cup honey, 1/4 cup milk, mashed bananas, vanilla extract and eggs to a bowl. Mix together.
Add the gluten-free flour, baking soda, and salt to the bowl and mix everything together.
Fold in 1 cup of chopped walnuts.
Use a spoon or scoop to pour the batter into the muffin tins. Top each muffin with the extra 1/2 cup of walnuts.
Place the muffin tray in the oven and bake at 350 for 30 minutes.
When the muffins are all done, remove the tray from the oven and allow to cool before enjoying!
