Beet Arugula Salad with Sliced Almonds

INGREDIENTS
Salad
6 cups arugula
1 large or 2 small pears, diced
4 oz. goat cheese, crumbled
¼ cup Mariani Sliced Almonds
4 medium-size beets, peeled and diced
1 tablespoon olive oil
Salt, to taste
Dressing
½ cup olive oil
¼ cup balsamic vinegar
1 teaspoon dijon mustard
1 tablespoon maple syrup
Salt and pepper, to taste
INSTRUCTIONS:
Preheat the oven to 400 degrees. Toss the diced beets in the tablespoon of olive oil and a pinch of salt, then spread them out on a medium-sized baking sheet. Bake for 40 minutes, then remove from the oven and let cool completely.
Prepare the salad dressing. Combine the olive oil, balsamic vinegar, mustard, maple syrup, salt, and pepper in a sealable jar. Seal and shake for 15-30 seconds, until all ingredients are combined.
Place the arugula, pear, goat cheese, almonds, and roasted beets in a large bowl and toss until all ingredients are evenly distributed.
Pour the dressing over the salad and toss again until all ingredients are coated.
