Irish Soda Bread with Walnuts & Whiskey Soaked Currants

INGREDIENTS

  • 4 cups all purpose flour

  • 2 teaspoons baking soda

  • 1 1/4 teaspoon salt

  • 1 cup Mariani Walnuts, chopped

  • 1 cup currants (or raisins)

  • 1 cup Irish whiskey

  • 2 cups buttermilk


INSTRUCTIONS:

  1. Place oven rack in middle position and preheat to 400 degrees.

  2. Bring whiskey up to a light simmer, add currants and let steep until plump, about 20-30 minutes.

  3. Line a baking sheet with parchment set aside.

  4. Sift together the flour, baking soda and salt into large mixing bowl.

  5. Add buttermilk to flour mixture, using rubber spatula, mix until combined, scraping the sides of the bowl as you go.

  6. Strain currants and add to bowl, add walnuts to bowl, mix with hands until well incorporated.

  7. Working quickly, turn mixture out on to lightly floured surface. Using floured hands, shape dough into ball.

  8. Place dough onto prepared baking sheet and press down so that dough is roughly two inches tall.  Using knife, slice a 4 x 4 inch X in the top of the dough.

  9. Bake 45-50 minutes until loaf is golden brown and sounds hollow when tapped.

  10. Remove from oven, wrap loosely with towel and let cool completely about two hours
