Raspberry Almond Oat Bars

INGREDIENTS

  • ½ cup (1 stick) unsalted butter, melted

  • ¼ cup brown sugar

  • ¼ cup granulated sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1 ½ cups flour

  • ¼ teaspoon salt

  • 1 cup old-fashioned rolled oats

  • ⅓ cup Mariani Sliced Almonds

  • 12 oz. raspberry jam (about 1 ¼ cup)

INSTRUCTIONS

  1. Preheat the oven to 350℉.  Grease and line a 8 x 8 baking pan with parchment paper.

  2. In a large bowl, whisk the butter, sugar, and brown sugar until combined.  Add the egg and vanilla and whisk again until combined.

  3. Fold the flour and salt into the dry ingredients until they are incorporated in a crumbly dough.  Add the oats and sliced almonds and fold in until they are evenly distributed.

  4. Press ⅔ of the dough into the bottom of the baking pan in an even layer, reserving the remainins ⅓.  Spread the raspberry jam in an even layer over the dough.  Sprinkle the remaining ⅓ of the dough over the raspberry jam layer.

  5. Bake for 29-32 minutes, until the crumbled dough on top of the bars is a rich golden brown.  Let the bars cool for at least an hour before slicing and serving.
