Shaved Root Vegetable Salad
INGREDIENTS
4 beets
3 large carrots
2 radishes
2 tablespoons lemon juice
2 tablespoons olive oil
Salt and pepper, to taste
¼ cup Mariani Sliced Almonds
2 tablespoons fresh mint leaves, chopped
INSTRUCTIONS:
Use a mandolin to thinly slice the beets, carrots, and radishes.
Add the sliced almonds to a small skillet over medium heat. Toss over heat for 3-4 minutes, until lightly browned.
Add the beets, carrots, and radishes to a large bowl. Add the lemon juice, olive oil, salt, and pepper and toss to coat the vegetables. Top with the toasted almonds and chopped mint leaves.
