Vegan Walnut "Meat" Tacos
INGREDIENTS
For the taco “meat”
1 cup Mariani Walnuts
8 oz shiitake or baby bella mushrooms, finely chopped
3 tablespoons soy sauce
½ teaspoon each: cumin, paprika, chili powder, garlic powder
Salt and pepper, to taste
To assemble the tacos
6 tortillas
Toppings of choice: sliced jalapeno, sliced radishes, chopped cilantro, diced avocado, and lime wedges all work well
INSTRUCTIONS:
Place the walnuts in a food processor and pulse 3-5 times to create a coarse meal.
Add the walnuts, mushrooms, soy sauce, and spices to a large skillet over medium heat. Sauté for 5-10 minutes, until the mushrooms are cooked through. Season with salt and pepper to taste.
Assemble the tacos. Distribute the walnut meat evenly between 6 tortillas and top with toppings of your choice.
