Walnut Pesto Chicken Pizza
INGREDIENTS
For the Walnut Basil Pesto
1/4 cup olive oil
1/2 cup basil leaves
1 tablespoon minced garlic
1/4 cup Mariani Walnuts
1 teaspoon lemon juice
1 teaspoon salt
For the Pizza
1 pizza crust
1/2 cup cooked chicken, cubed
1/2 cup mozzarella pearls
1/2 cup tomatoes, halved or diced
3/4 cup basil pesto
INSTRUCTIONS:
Preheat the oven to 350 degrees.
Make the pesto. Add the basil, oil, walnuts, lemon juice, garlic and salt to a food processor and process until smooth and creamy.
Place your pizza crust on a sheet pan.
Add the toppings to the crust. Start by adding 3/4 cup of pesto on top of the crust and use a spoon to spread it out evenly over the crust.
Next add the tomatoes, chicken, and mozzarella pearls.
Place the pan in the oven and bake for 20-25 minutes or until the cheese is melted and crust is crispy.
