Broccoli Slaw Salad with Creamy Almond Dressing

INGREDIENTS

  • 3 tablespoons extra virgin olive oil

  • 3 tablespoons sherry or white wine vinegar

  • 2 teaspoons sugar

  • 3/4 teaspoon sea salt, or to taste

  • Freshly ground pepper to taste

  • 1 (12-ounce) bag broccoli slaw (4 cups) *

  • 1/3 cup golden raisins

  • 1/4 cup minced red onion

  • 4 slices cooked, crisp bacon (optional)

INSTRUCTIONS

  1. Place 1 tablespoon of almonds, oil, vinegar, sugar, salt and pepper in a small blender or food processor and blend until dressing is smooth.

  2. Place dressing in a large bowl. Add broccoli slaw, remaining almonds, raisins and onions. Toss well to coat. Stir in bacon and garnish with additional almonds if desired. Season with pepper and serve immediately.

*May substitute 4 cups shaved Brussels sprouts.
