Citrus Salad with Slivered Almonds
INGREDIENTS
For the Salad:
4 cups arugula
1 large grapefruit, sliced
2 blood oranges, sliced
2 navel oranges, sliced
⅓ cup fresh mint leaves, torn
¼ cup Mariani Slivered Almonds
For the Dressing:
Juice of one lemon
¼ cup extra virgin olive oil
1 teaspoon Dijon Mustard
1 teaspoon honey
¼ cup garlic powder
Salt and pepper, to taste
INSTRUCTIONS:
Make the dressing. Add all of the dressing ingredients to a small bowl and mix to combine.
Add the arugula, grapefruit, oranges, and blood oranges to a large bowl. Pour the dressing on top and toss to coat.
Sprinkle the mint leaves and slivered almonds on top.
