Carrot Cake Baked Oatmeal
INGREDIENTS
For the oats:
2 cups old-fashioned rolled oats
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon baking powder
¼ teaspoon salt
1 ½ cups milk or plant milk of choice
2 eggs
½ cup maple syrup
1 teaspoon vanilla extract
¾ cup grated carrots
½ cup Mariani Walnuts
For the icing:
4 oz. cream cheese, room temperature
3 tablespoons maple syrup
3 tablespoons milk or plant milk of choice
INSTRUCTIONS:
Preheat the oven to 350 degrees. Grease an 8x8” baking dish and line with parchment paper.
Add the oats, cinnamon, nutmeg, baking powder, and salt to a large bowl. Mix to combine.
In a separate bowl, Add the milk, eggs, maple syrup, and vanilla extract and mix to combine.
Add the wet ingredients to the dry ingredients and mix until combined. Fold in the carrots and walnuts.
Pour the mixture into the prepared baking dish. Bake for 45 minutes.
While the oats are baking, prepare the icing. Add the cream cheese, maple syrup, and milk to a small bowl and whisk until smooth.
Drizzle the icing onto the oats, serve, and enjoy!
