Cranberry Almond Pie (Gluten-Free Optional)
INGREDIENTS
2 cups cranberries
1/4 cup sugar
1/2 cup Mariani Sliced Almonds
2 eggs
1 stick softened butter
1 cup sugar
1 cup gluten-free or all purpose flour
1 tsp almond extract
INSTRUCTIONS:
Preheat the oven to 350 degrees.
Add the cranberries to the bottom of a pie pan with almonds and sugar. Mix them all together to coat everything with sugar.
In a medium size bowl, beat the butter and sugar together.
Add the eggs and almond extract and whisk together.
Pour in the gluten-free flour and whisk until smooth.
Pour the batter over the top of the cranberries and top with sliced almonds.
Bake for 40-50 minutes or until a toothpick comes out clean.
