Cranberry Almond Pie (Gluten-Free Optional)
 

INGREDIENTS

  • 2 cups cranberries

  • 1/4 cup sugar

  • 1/2 cup Mariani Sliced Almonds

  • 2 eggs

  • 1 stick softened butter

  • 1 cup sugar

  • 1 cup gluten-free or all purpose flour

  • 1 tsp almond extract


INSTRUCTIONS:

  1. Preheat the oven to 350 degrees.

  2. Add the cranberries to the bottom of a pie pan with almonds and sugar. Mix them all together to coat everything with sugar.

  3. In a medium size bowl, beat the butter and sugar together.

  4. Add the eggs and almond extract and whisk together.

  5. Pour in the gluten-free flour and whisk until smooth.

  6. Pour the batter over the top of the cranberries and top with sliced almonds.

  7. Bake for 40-50 minutes or until a toothpick comes out clean.
