INGREDIENTS

  • 2 cups whole Mariani Walnuts

  • 2 cup whole Mariani Almonds

  • 1 cup dried cranberries (optional)

  • 1 tablespoon olive oil

  • 3 tablespoons maple syrup

  • 3 tablespoons dark brown sugar

  • 1 tablespoon chopped fresh rosemary

  • 1 teaspoon kosher salt

  • ⅛ teaspoon black pepper

  • ⅛ teaspoon cayenne pepper

  • ⅛ teaspoon cinnamon

  • Pinch ground nutmeg

  • Pinch ground clove

  • Pinch coarse salt to finish (optional)


INSTRUCTIONS:

  1. Preheat the oven to 375 degrees. Line a rimmed baking sheet with parchment paper or aluminum foil.

  2. Stir together the olive oil, maple syrup, dark brown sugar, rosemary, salt, black pepper, cayenne pepper, cinnamon, nutmeg and clove in a large mixing bowl until well blended, then stir in the nuts until evenly coated. Spread the nuts on the baking sheet in a single layer, coat nuts with remaining mixture that's left in the bowl.

  3. Roast (middle rack) for 9 to 11 minutes, stirring them every 3 minutes (to prevent burning), until browned and fragrant. Let nuts cool completely, about 30 minutes; once fully cooled, they will be crispy and crunchy.

  4. Add nut mixture back to a clean mixing bowl and stir in cranberries. Add to your holiday cheese board or enjoy as a mid-afternoon pick-me-up.
