Holiday Spiced Nuts

INGREDIENTS
2 cups whole Mariani Walnuts
2 cup whole Mariani Almonds
1 cup dried cranberries (optional)
1 tablespoon olive oil
3 tablespoons maple syrup
3 tablespoons dark brown sugar
1 tablespoon chopped fresh rosemary
1 teaspoon kosher salt
⅛ teaspoon black pepper
⅛ teaspoon cayenne pepper
⅛ teaspoon cinnamon
Pinch ground nutmeg
Pinch ground clove
Pinch coarse salt to finish (optional)
INSTRUCTIONS:
Preheat the oven to 375 degrees. Line a rimmed baking sheet with parchment paper or aluminum foil.
Stir together the olive oil, maple syrup, dark brown sugar, rosemary, salt, black pepper, cayenne pepper, cinnamon, nutmeg and clove in a large mixing bowl until well blended, then stir in the nuts until evenly coated. Spread the nuts on the baking sheet in a single layer, coat nuts with remaining mixture that's left in the bowl.
Roast (middle rack) for 9 to 11 minutes, stirring them every 3 minutes (to prevent burning), until browned and fragrant. Let nuts cool completely, about 30 minutes; once fully cooled, they will be crispy and crunchy.
Add nut mixture back to a clean mixing bowl and stir in cranberries. Add to your holiday cheese board or enjoy as a mid-afternoon pick-me-up.
