Lemony Goat Cheese Stuffed Dates

INGREDIENTS
30 dates, pitted (8 oz bag of dates)
¼ cup Mariani Walnuts, chopped and toasted
3 oz goat cheese
2 oz mascarpone
1 tablespoon lemon zest
1 tablespoon lemon juice
1 tablespoon honey
⅛ teaspoon kosher salt
⅛ teaspoon black pepper
INSTRUCTIONS
In a medium mixing bowl, combine goat cheese, mascarpone, lemon zest, lemon juice, honey, salt, and pepper. Stir until smooth, and no lumps remain. Add walnuts, stir until combined.
Slice dates lengthwise down the middle, leaving one side attached.
Place goat cheese filling into a zip top bag (or piping bag), cut ½ inch off of the tip. Pipe the filling evenly into the center of each date.
Top dates with additional honey, zest, salt, pepper before serving, if desired.
