Key Lime Parfaits with Walnut Graham Cracker Crust
INGREDIENTS
For the crust
6 graham cracker sheets
½ cup Mariani Walnuts
For the key lime filling
1 cup heavy cream
8 ounces cream cheese, softened at room temperature.
1 cup condensed milk
½ cup key lime juice
Optional: key lime sliced, for garnish
INSTRUCTIONS
Add the graham crackers and walnuts to a ziploc freezer bag. Take a large rolling pin and roll it over the bag, crushing the graham crackers and walnuts into crumbs and small pieces.
Make the key lime filling. Add the heavy cream to a large bowl or the bowl of a stand mixer. Whip until stiff peaks form.
In another bowl, use an electric mixer to beat together the cream cheese, condensed milk, and key lime juice until completely smooth.
Fold the whipped cream into the key lime mixture.
Add 1-2 tablespoons of the walnut crumb mixture to the bottom of a cup. Fill a cup halfway with the key lime filling. Add another tablespoon of crumbs, then fill the cup up the rest of the way with filling. Repeat until you have used up all of the filling.
Chill the cups in the fridge for at least one hour before serving.
