Pumpkin Walnut Pancakes
 

INGREDIENTS

  • 2 cups flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 tablespoon pumpkin pie spice

  • 1/2 cup pumpkin puree

  • 1/3 cup sugar

  • 2 eggs

  • 3 tablespoons melted butter

  • 1/2 cup chopped Mariani Walnuts + extra for topping

  • 1 1/4 cup milk


INSTRUCTIONS:

  1. Add the wet ingredients into a medium size bowl. Whisk together.

  2. Add the dry ingredients to the same bowl and whisk to combine. Fold in the walnuts.

  3. Preheat a skillet or griddle and grease it. Use 1/4 cup scoop to add 1/4 cup batter to the griddle.

  4. Allow the pancakes to cook on one side for 3 minutes or until it begins to bubble.

  5. Flip the pancakes and cook until done on both sides.

  6. Remove from the griddle and top with maple syrup and walnuts.
