Pumpkin Walnut Pancakes
INGREDIENTS
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon pumpkin pie spice
1/2 cup pumpkin puree
1/3 cup sugar
2 eggs
3 tablespoons melted butter
1/2 cup chopped Mariani Walnuts + extra for topping
1 1/4 cup milk
INSTRUCTIONS:
Add the wet ingredients into a medium size bowl. Whisk together.
Add the dry ingredients to the same bowl and whisk to combine. Fold in the walnuts.
Preheat a skillet or griddle and grease it. Use 1/4 cup scoop to add 1/4 cup batter to the griddle.
Allow the pancakes to cook on one side for 3 minutes or until it begins to bubble.
Flip the pancakes and cook until done on both sides.
Remove from the griddle and top with maple syrup and walnuts.
