Waldorf Salad with Candied Walnuts
 

INGREDIENTS

  • ½ cup Mariani Walnuts (whole or chopped)

  • ¼ cup granulated sugar

  • 2 medium apples, chopped

  • 1 cup grapes, halved

  • 2 cups celery, sliced

  • ¼ cup mayonnaise

  • Juice of ½ a lemon

  • Salt and pepper, to taste

  • Optional: Boston or iceberg lettuce, for plating


INSTRUCTIONS:

  1. Make the candied walnuts. Line a baking sheet with parchment paper and bring a skillet to medium heat. Add the sugar to the skillet. Stir the sugar over heat for 5-10 minutes, until it has completely melted. Add the walnuts to the skillet and toss with the melted sugar until evenly coated. Spread the candied walnuts across the parchment-lined baking sheet and allow to cool for 10-15 minutes.

  2. Add the apples, grapes, and celery to a large bowl and toss until evenly distributed. Add the mayonnaise, lemon juice, salt, and pepper, and toss all of the ingredients together again to combine.

  3. Serve the salad over a bed of lettuce, and top with the cooled candied walnuts
